What is Gluten?


      Gluten is a protein in wheat.  It is also in barley and rye, you can also not eat oats because they are commonly grown with rye or barley.  Gluten is used as a thickener in soups and dairy products.   If gluten free food is processed where wheat is there is a chance of contamination.
